Ingredients

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and sugar until well blended.
  3. Beat in the eggs, one at a time, then stir in the mashed bananas, buttermilk, and vanilla.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually fold the dry ingredients into the banana mixture, mixing just until combined.
  6. Fold in walnuts or chocolate chips, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
