Ingredients

  • 4 medium russet potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 (14.5 oz) can diced tomatoes (undrained)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Season with salt and pepper, then drain excess fat.
  3. Lightly grease a 9×13-inch baking dish.
  4. Layer half of the sliced potatoes evenly across the bottom of the dish.
  5. Top with half the cooked beef, half the onion slices, half the bell pepper slices, and half the diced tomatoes.
  6. Repeat the layers with the remaining potatoes, beef, onion, bell pepper, and tomatoes.
  7. Season the top layer with additional salt and pepper if desired.
  8. Cover the dish tightly with aluminum foil.
  9. Bake for 2 hours, until the potatoes are tender and the casserole is bubbling.
  10. Let rest for 10 minutes before serving.
