Ingredients
2 pounds red potatoes, quartered
3 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated parmesan cheese
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
Salt and black pepper to taste
2 tablespoons chopped fresh parsley, for garnish
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss quartered potatoes with olive oil, garlic, parmesan, oregano, thyme, paprika, salt, and pepper.
Spread potatoes on the prepared baking sheet in a single layer.
Roast for 30-35 minutes, flipping halfway, until golden brown and crispy.
Remove from oven and sprinkle with chopped parsley before serving.
