Description

Ingredients

  • 2 pounds red potatoes, quartered

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1/2 cup grated parmesan cheese

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • Salt and black pepper to taste

  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large bowl, toss quartered potatoes with olive oil, garlic, parmesan, oregano, thyme, paprika, salt, and pepper.

  3. Spread potatoes on the prepared baking sheet in a single layer.

  4. Roast for 30-35 minutes, flipping halfway, until golden brown and crispy.

  5. Remove from oven and sprinkle with chopped parsley before serving.

  • For extra crispiness, soak potatoes in cold water for 30 minutes and dry thoroughly before seasoning.
