Instructions
- Preheat Griddle or Skillet: Set your griddle or a large skillet over medium-high heat and allow it to preheat while you prepare the filling. A hot surface helps achieve that crispy, golden crust on the quesadilla.
- Cook the Ground Beef: Add the ground beef to the hot griddle or skillet. Sprinkle with salt and black pepper. Cook, stirring and breaking apart the beef with a spatula, until it is fully browned and cooked through, about 5-7 minutes. Drain off any excess grease.
- Add Pickles: Stir in the chopped dill pickles with the cooked beef mixture right on the griddle or transfer the beef mixture to a bowl and mix in the pickles. This adds a tangy burst similar to a classic cheeseburger.
- Assemble Quesadillas: Lay out each tortilla and, on one half, layer a generous handful of shredded cheddar cheese, a scoop of the beef and pickle mixture, shredded mozzarella, and a sprinkle of diced onions. Add a bit more cheddar for extra meltiness, then fold the tortilla over to form a half-moon.
- Grill the Quesadillas: Place the filled quesadillas onto the preheated griddle. Cook each side for 2–3 minutes, pressing gently with a spatula, until the tortilla is golden brown and crisp and the cheese inside is completely melted.
- Serve: Transfer the quesadillas to a cutting board and slice them into wedges. Serve hot with your favorite burger condiments, such as ketchup, mustard, or burger sauce, for dipping.
