- 4–6 apples, peeled and thinly sliced
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 12–14 rice paper sheets
- 2 tbsp neutral cooking oil (like vegetable or coconut)
Instructions
- Preheat oven to 450°F (232°C).
- In a large bowl, combine sliced apples, brown sugar, and cinnamon. Mix well and let sit for 5–10 minutes.
- Fill a wide bowl or shallow pan with warm water. Dip one rice paper sheet at a time in the water for about 1–2 minutes until soft and pliable.
- Lay the softened rice paper on a clean surface. Spoon 1–2 tablespoons of the apple mixture into the center.
- Fold the bottom of the sheet over the filling, then fold in the sides, and roll tightly to form a sealed parcel.
- Repeat with the remaining apple mixture and rice paper sheets.
- Lightly oil a baking sheet. Place the rolls on the sheet and brush the tops with oil.
- Bake for 25–30 minutes, turning them once or twice during baking, until golden and crisp.
- Serve warm. Optionally, drizzle with maple syrup or serve with vegan vanilla ice cream.

- Ensure rice paper is fully softened before filling to prevent tearing.
