Description

A fun and wholesome twist on classic apple pie, these baked rice paper rolls are filled with sweet cinnamon apples, then baked until golden and crispy. Gluten-free and vegan, they make a perfect light dessert or snack with all the cozy flavors of fall.

  • 46 apples, peeled and thinly sliced
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 1214 rice paper sheets
  • 2 tbsp neutral cooking oil (like vegetable or coconut)


Instructions

  1. Preheat oven to 450°F (232°C).
  2. In a large bowl, combine sliced apples, brown sugar, and cinnamon. Mix well and let sit for 5–10 minutes.
  3. Fill a wide bowl or shallow pan with warm water. Dip one rice paper sheet at a time in the water for about 1–2 minutes until soft and pliable.
  4. Lay the softened rice paper on a clean surface. Spoon 1–2 tablespoons of the apple mixture into the center.
  5. Fold the bottom of the sheet over the filling, then fold in the sides, and roll tightly to form a sealed parcel.
  6. Repeat with the remaining apple mixture and rice paper sheets.
  7. Lightly oil a baking sheet. Place the rolls on the sheet and brush the tops with oil.
  8. Bake for 25–30 minutes, turning them once or twice during baking, until golden and crisp.
  9. Serve warm. Optionally, drizzle with maple syrup or serve with vegan vanilla ice cream.
