Zesty Chicken Scarpariello

Description

Turn up the heat with our Zesty Chicken Scarpariello – juicy chicken, tangy peppers, and bold, irresistible Italian flavor in every bite!


Ingredients

  • 2 lbs bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 oz Italian sausage, cut into 1-inch pieces
  • 1 small onion, chopped
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/4 cup red wine vinegar
  • 1 cup pickled cherry peppers (whole or sliced), with a bit of brine
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry with paper towels and season with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken, skin-side down, and sear for 4-5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, add sausage pieces and cook for 3-4 minutes until browned. Remove and set aside with the chicken.
  5. Add chopped onion to the skillet and cook for 2-3 minutes until softened. Stir in garlic and cook for another 30 seconds.
  6. Deglaze the pan with white wine, scraping up any browned bits. Add chicken broth, vinegar, cherry peppers (with a splash of brine), and oregano.
  7. Return the chicken and sausage to the skillet, skin-side up. Spoon some of the sauce over the top.
  8. Transfer the skillet to the oven and roast for 20-25 minutes until chicken is cooked through.
  9. Garnish with fresh parsley and serve hot with crusty bread or roasted potatoes.

  • Use hot or sweet Italian sausage based on your spice preference.
  • Substitute pickled cherry peppers with banana peppers if desired.
  • Ensure internal chicken temperature reaches 165°F (74°C).
