- 2 lbs bone-in, skin-on chicken thighs
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 oz Italian sausage, cut into 1-inch pieces
- 1 small onion, chopped
- 4 garlic cloves, minced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/4 cup red wine vinegar
- 1 cup pickled cherry peppers (whole or sliced), with a bit of brine
- 1 teaspoon dried oregano
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken dry with paper towels and season with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken, skin-side down, and sear for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add sausage pieces and cook for 3-4 minutes until browned. Remove and set aside with the chicken.
- Add chopped onion to the skillet and cook for 2-3 minutes until softened. Stir in garlic and cook for another 30 seconds.
- Deglaze the pan with white wine, scraping up any browned bits. Add chicken broth, vinegar, cherry peppers (with a splash of brine), and oregano.
- Return the chicken and sausage to the skillet, skin-side up. Spoon some of the sauce over the top.
- Transfer the skillet to the oven and roast for 20-25 minutes until chicken is cooked through.
- Garnish with fresh parsley and serve hot with crusty bread or roasted potatoes.
Notes
- Use hot or sweet Italian sausage based on your spice preference.
- Substitute pickled cherry peppers with banana peppers if desired.
- Ensure internal chicken temperature reaches 165°F (74°C).
