For the Whipped Cottage Cheese:

  • 16 oz (450g) cottage cheese

  • ¼ cup (60g) crumbled feta cheese

  • 2 tablespoons olive oil

For the Marinated Tomatoes:

  • 2 cups (300g) baby or grape tomatoes, quartered

  • ¼ cup (15g) fresh parsley, chopped

  • ¼ cup (15g) fresh basil, chopped

  • 3 tablespoons olive oil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Optional for Serving:

  • Pita chips or crostini


Instructions

  • In a food processor, blend cottage cheese, feta, and 2 tablespoons olive oil until smooth.
  • In a bowl, combine tomatoes, parsley, basil, 3 tablespoons olive oil, salt, and pepper. Let marinate 15 minutes.
  • Spread whipped cottage cheese on a serving dish.
  • Spoon marinated tomatoes on top.
  • Serve with pita chips or crostini if desired.

  • Use full-fat cottage cheese for best creaminess.
  • Marinate tomatoes ahead of time for deeper flavor.
