For the Whipped Cottage Cheese:
16 oz (450g) cottage cheese
¼ cup (60g) crumbled feta cheese
2 tablespoons olive oil
For the Marinated Tomatoes:
2 cups (300g) baby or grape tomatoes, quartered
¼ cup (15g) fresh parsley, chopped
¼ cup (15g) fresh basil, chopped
3 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
Optional for Serving:
Pita chips or crostini
Instructions
- In a food processor, blend cottage cheese, feta, and 2 tablespoons olive oil until smooth.
- In a bowl, combine tomatoes, parsley, basil, 3 tablespoons olive oil, salt, and pepper. Let marinate 15 minutes.
- Spread whipped cottage cheese on a serving dish.
- Spoon marinated tomatoes on top.
- Serve with pita chips or crostini if desired.
Notes
- Use full-fat cottage cheese for best creaminess.
- Marinate tomatoes ahead of time for deeper flavor.
