Description

This Texas Roadhouse Smothered Chicken is a restaurant-style favorite featuring marinated chicken breasts smothered in sautéed mushrooms and onions, then topped with gooey, melted Monterey Jack cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • ½ cup Italian dressing
  • 1 tablespoon avocado oil or other neutral, high-heat oil
  • 1 tablespoon butter
  • 10 oz. cremini mushrooms, sliced
  • ½ cup yellow onion, sliced
  • 2 tablespoons water
  • ¼ teaspoon white pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 oz. Monterey Jack cheese, sliced

Instructions

  1. Place chicken breasts on a plate or cutting board. Using a jacquard tool or fork, poke several holes in the meat. Place chicken in a dish or a gallon-sized ziploc bag.
  2. Pour Italian dressing over the chicken, ensuring it’s well-coated. Refrigerate and let marinate for 2 to 24 hours.
  3. Preheat oven to 400°F (204°C).
  4. Heat a cast iron skillet over medium-high heat. Add avocado oil to the pan, then place the marinated chicken breasts in the skillet. Cook for approximately 5 minutes on each side until browned. Remove chicken and set aside.
  5. Reduce heat to medium. Add butter to the skillet, then add sliced mushrooms and onions. Sauté until both are softened and fragrant, about 5-7 minutes. Add water and scrape up any browned bits from the bottom of the pan.
  6. Add white pepper, black pepper, onion powder, garlic powder, and salt to the mushroom-onion mixture. Stir to combine.
  7. Move mushrooms and onions to the side of the skillet and place the browned chicken breasts back into the skillet. Spoon the mushroom-onion mixture over the chicken.
  8. Top each chicken breast with a slice of Monterey Jack cheese.
  9. Place the skillet in the preheated oven and bake for 10 minutes, until the chicken is cooked through and the cheese is melted and starting to brown.

Notes

  • For a richer flavor, use a mix of Monterey Jack and mozzarella cheese.
  • Allow the chicken to marinate overnight for best results.
