Spicy Shrimp Sushi Towers are a playful and elegant take on sushi, layering seasoned sushi rice, creamy avocado-cucumber, and spicy sriracha shrimp in a tower shape for a beautiful appetizer or snack. Sushi Rice
- 1 cup uncooked short-grain sushi rice
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
Avocado-Cucumber Layer
- 1 cup mashed avocado
- 1 cup diced cucumber
- Juice of 1 lime
- Salt, to taste
Spicy Shrimp Layer
- 1/2 pound cooked shrimp, diced
- 3 tablespoons mayonnaise
- 1 tablespoon sriracha
To Assemble
- 4 teaspoons furikake seasoning
Instructions
- Prepare the Sushi Rice: Rinse the sushi rice thoroughly under cold water until the water runs clear. Combine the rice and 2 cups water in a saucepan. Bring to a boil, then cover and simmer for 15–20 minutes, or until water is absorbed and the rice is tender.
- Season the Rice: Transfer the cooked rice to a large bowl. Gently stir in the rice vinegar, sugar, and salt while the rice is still warm. Allow the seasoned rice to cool to room temperature before using.
- Mix the Avocado-Cucumber Layer: In a small bowl, combine the mashed avocado, diced cucumber, lime juice, and a pinch of salt. Stir until evenly mixed. Taste and adjust salt if desired.
- Make the Spicy Shrimp: In a separate bowl, mix the diced cooked shrimp with the mayonnaise and sriracha until the shrimp is thoroughly coated with the spicy mayo.
- Assemble the Towers: Lightly grease the inside of a 1-cup measuring cup or a round food mold. Press a layer of seasoned sushi rice (about 1/4 cup) firmly into the bottom. Add an even layer of the avocado-cucumber mixture, followed by a generous scoop of the spicy shrimp mixture on top.
- Unmold the Towers: Place a serving plate over the measuring cup, then gently invert the cup and lift it away to reveal the sushi tower. Repeat with remaining ingredients to make 4 towers.
- Finish and Serve: Sprinkle each tower with about 1 teaspoon of furikake seasoning. Serve immediately for the freshest flavor and best texture.
Notes
- You can substitute crab meat or cooked salmon for shrimp if desired.
- If you don’t have furikake, try using toasted sesame seeds and crumbled nori instead.
- Assemble just before serving to prevent the avocado layer from browning.
- A food ring or biscuit cutter also works well for forming the towers.
