Wet Ingredients
- 115g unsalted butter, melted and cooled slightly
- 150g light brown sugar
- 115g granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract

- 180g plain flour
- 1/2 tsp bicarbonate of soda
- 1 tsp salt (or 1/2 tsp for a less salty taste)
Mix-ins & Toppings
- 200g dark chocolate chips, plus extra for topping
- Optional: flaky sea salt for sprinkling
Instructions
- Mix Wet Ingredients: In a large bowl, whisk together the melted butter, light brown sugar, and granulated sugar until smooth and well combined.
- Add Egg and Vanilla: Add in the egg and vanilla extract. Whisk again until the mixture is fully incorporated and glossy.
- Combine Dry Ingredients: Sift in the plain flour, bicarbonate of soda, and salt. Stir gently with a spatula or wooden spoon until just combined and a soft dough forms. Be careful not to overmix.
- Fold in Chocolate Chips: Fold in the chocolate chips until evenly distributed through the dough.
- Chill the Dough: Cover the bowl and chill the dough in the fridge for at least 1 hour. If chilling overnight, allow the dough to soften slightly at room temperature before baking.
- Prepare for Baking: Preheat your oven to 180°C (160°C fan). Line a large baking tray with parchment paper.
- Shape the Cookies: Scoop the chilled dough into 12-13 equally sized balls. Place them at least 4 inches apart on the prepared tray. Bake in batches if necessary.
- Bake the Cookies: Bake for 8–10 minutes, or until the cookie edges are golden brown and the centers still look slightly underdone.
- Add Toppings: While the cookies are still hot, gently press a few extra chocolate chips on top and sprinkle with flaky sea salt if desired.
- Cool Completely: Let the cookies cool on the baking tray for at least 20 minutes. This helps them set for that signature chewy texture.
- Reheat if Desired: To enjoy cookies warm and gooey later, reheat them in the oven or air fryer for 2 minutes on low heat.
Notes
- Chilling the dough prevents the cookies from spreading too much and enhances their chewy texture.
- Add more or less salt to taste; flaky sea salt on top is optional but highly recommended for flavor contrast.
- These cookies are best enjoyed within 3 days, stored in an airtight container at room temperature.
- For softer cookies after storing, simply reheat briefly before serving.
