Description
Frozen s’mores ice cream sandwiches with gooey marshmallows, rich chocolate, and graham crackers — the perfect cool treat for summer parties!
Ingredients
8 graham crackers, broken in half
1 pint vanilla ice cream (or flavor of choice)
1/2 cup mini marshmallows
1/2 cup milk chocolate chips, melted
2 tbsp heavy cream
1/2 cup crushed graham crackers (for coating)
1/4 cup mini chocolate chips (optional)
Instructions
Line a baking sheet with parchment paper. Arrange half of the graham cracker squares on the sheet.
Scoop 2–3 tablespoons of ice cream onto each graham cracker base, top with another cracker to form sandwiches.
Freeze for 30 minutes to firm up.
Melt the milk chocolate chips with heavy cream until smooth.
Toast mini marshmallows using a gas flame, broiler, or kitchen torch.
Dip half of each frozen sandwich into melted chocolate. Sprinkle with crushed graham crackers and mini chocolate chips if desired.
Press toasted marshmallows onto the sandwiches.
Freeze sandwiches for at least 1 hour to fully set.
Serve frozen and enjoy!
Notes
Feel free to experiment with different ice cream flavors like chocolate or peanut butter swirl.
Sandwiches can be individually wrapped and stored in the freezer for up to 2 weeks.
For a softer chocolate coating, add a bit more heavy cream when melting.
