S’mores Ice Cream Sandwiches

Description

Frozen s’mores ice cream sandwiches with gooey marshmallows, rich chocolate, and graham crackers — the perfect cool treat for summer parties!


Ingredients

  • 8 graham crackers, broken in half

  • 1 pint vanilla ice cream (or flavor of choice)

  • 1/2 cup mini marshmallows

  • 1/2 cup milk chocolate chips, melted

  • 2 tbsp heavy cream

  • 1/2 cup crushed graham crackers (for coating)

  • 1/4 cup mini chocolate chips (optional)


Instructions

  • Line a baking sheet with parchment paper. Arrange half of the graham cracker squares on the sheet.

  • Scoop 2–3 tablespoons of ice cream onto each graham cracker base, top with another cracker to form sandwiches.

  • Freeze for 30 minutes to firm up.

  • Melt the milk chocolate chips with heavy cream until smooth.

  • Toast mini marshmallows using a gas flame, broiler, or kitchen torch.

  • Dip half of each frozen sandwich into melted chocolate. Sprinkle with crushed graham crackers and mini chocolate chips if desired.

  • Press toasted marshmallows onto the sandwiches.

  • Freeze sandwiches for at least 1 hour to fully set.

 

  • Serve frozen and enjoy!

Notes

  • Feel free to experiment with different ice cream flavors like chocolate or peanut butter swirl.

  • Sandwiches can be individually wrapped and stored in the freezer for up to 2 weeks.

 

  • For a softer chocolate coating, add a bit more heavy cream when melting.
