- 1/2 lb shrimp, peeled and deveined
- 4 large eggs
- 2 tablespoons milk or water
- Salt and white pepper, to taste
- 2 tablespoons oil (vegetable or neutral oil)
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Optional: 1 teaspoon Shaoxing wine
Instructions
- In a bowl, beat the eggs with milk or water. Season with a pinch of salt and white pepper. Set aside.
- Lightly season shrimp with a pinch of salt and white pepper.
- Heat 1 tablespoon of oil in a wok or skillet over medium-high heat. Add shrimp and cook until pink and just cooked through, about 2–3 minutes. Remove and set aside.
- Add remaining oil to the pan. Pour in beaten eggs and scramble gently until just set but still slightly runny.
- Return shrimp to the pan, add soy sauce and sesame oil (and Shaoxing wine if using), and stir everything together gently.
- Add green onions, toss briefly, and remove from heat.
- Serve immediately with steamed rice or on its own.
Notes
- Use fresh or frozen shrimp; thaw thoroughly before cooking if frozen.
- Adjust seasoning to taste and add a splash of chicken broth for extra moisture if desired.
