Savory Mushroom Toasts With Gruyère And Thyme

Description

Earthy sautéed mushrooms layered over crispy baguette slices, topped with melted Gruyère and fresh thyme for a rich and elegant bite.


Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 shallots, finely chopped
  • 2 garlic cloves, minced
  • 16 oz cremini mushrooms, cleaned and sliced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves
  • 1/4 cup dry white wine (or vegetable broth)
  • 1 baguette, sliced into 1/2-inch pieces
  • 1 tablespoon olive oil (for brushing bread)
  • 1 1/2 cups shredded Gruyère cheese


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, heat olive oil and butter until melted.
  3. Add shallots and sauté for 2-3 minutes, until softened.
  4. Stir in garlic and cook for another 30 seconds until fragrant.
  5. Add sliced mushrooms, salt, and pepper. Sauté for about 8-10 minutes until mushrooms are softened and moisture has evaporated.
  6. Add thyme and deglaze the pan with white wine or broth. Let simmer for 2-3 minutes until liquid is mostly absorbed. Remove from heat.
  7. While mushrooms cook, place baguette slices on a baking sheet. Brush each slice lightly with olive oil.
  8. Toast in the oven for 6-8 minutes, flipping halfway through, until golden.
  9. Top each toasted baguette slice with a spoonful of the mushroom mixture and sprinkle with shredded Gruyère.
  10. Return to oven for 4-5 minutes, or until the cheese is melted and bubbly.
  11. Serve warm, garnished with extra thyme if desired.

  • Substitute Gruyère with Swiss or Fontina cheese for variation.
  • Use gluten-free baguette for a gluten-free option.
  • Vegetable broth can be used instead of white wine for a non-alcoholic version.
