Description

Sausage hash brown breakfast casserole baked with eggs, cheese, and peppers—hearty, cheesy, and perfect for brunch, holidays, or make-ahead mornings.

Ingredients

Scale

Sausage Layer

  • 1 lb breakfast sausage

Hash Brown Mixture

  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese

Egg Mixture

  • 8 large eggs
  • 2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Baking

  • Cooking spray

Instructions

  1. Preheat & Prep the Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray to prevent sticking and ensure easy serving.
  2. Brown the Sausage: In a large skillet over medium heat, cook the breakfast sausage until it’s browned and crumbled, breaking it up with a spatula as it cooks. Drain any excess grease from the pan.
  3. Combine Hash Browns, Sausage, & Cheese: In a large mixing bowl, add the thawed hash browns, cooked sausage, and shredded cheddar cheese. Stir to combine, ensuring the ingredients are evenly distributed. Spread this mixture evenly in the prepared baking dish.
  4. Prepare the Egg Mixture: In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until thoroughly blended and smooth.
  5. Assemble the Casserole: Pour the egg mixture evenly over the hash brown-sausage mixture in the baking dish, making sure it soaks through the layers.
  6. Bake: Place the dish in the oven and bake uncovered for 45–50 minutes, or until the center is set and the top becomes golden brown.
  7. Cool & Serve: Allow the casserole to cool for 5–10 minutes so it sets, making it easier to slice. Serve warm and enjoy!

Notes

  • For extra flavor, try adding diced bell peppers or onions to the hash brown mixture.
  • You can substitute breakfast sausage with turkey sausage for a lighter option.
  • This casserole can be made the night before; simply refrigerate overnight and bake in the morning.
  • Leftovers keep well in the fridge for up to 4 days and can be reheated in the microwave.
  • Feel free to swap cheddar for Monterey Jack, Swiss, or a cheese blend.
