Description

Ingredients

  • 1 lb smoked sausage (kielbasa or andouille), sliced
  • ½ head of cabbage, chopped
  • 3 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 medium onion, chopped
  • 3 cups chicken broth
  • 1 tsp garlic powder
  • ½ tsp smoked paprika (optional)
  • ½ tsp dried thyme
  • Salt and black pepper to taste


Instructions

  • Sauté the Sausage:
    • In a large pot, cook sausage over medium heat until browned (about 5 minutes). Remove and set aside.
  • Sauté the Vegetables:
    • Add onion, carrots, and potatoes to the pot. Cook for 5 minutes until onions are translucent.
  • Add Cabbage and Seasonings:
    • Stir in cabbage, garlic powder, smoked paprika, thyme, salt, and pepper. Cook for 5 more minutes.
  • Simmer the Stew:
    • Return sausage to the pot, pour in broth, and bring to a boil. Reduce heat, cover, and simmer for 25–30 minutes until vegetables are tender.
  • Adjust Seasoning and Serve:
    • Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
