Rustic Blueberry Butter

Description

A luscious, spreadable fruit butter made with fresh blueberries, subtly sweetened and spiced, perfect for toast, yogurt, pancakes, or gifting.


Ingredients

  • 6 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar (adjust to taste)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Rinse the blueberries thoroughly and place them in a large heavy-bottomed pot or Dutch oven.
  2. Add the sugar, cinnamon, nutmeg, lemon juice, vanilla extract, and a pinch of salt to the pot.
  3. Cook over medium heat, stirring occasionally, until the berries start to burst and release their juices (about 10 minutes).
  4. Use an immersion blender (or transfer to a blender carefully) to purée the mixture until smooth.
  5. Return the purée to the pot and simmer on low heat, uncovered, stirring often to prevent sticking, for 30–45 minutes or until thickened to your desired consistency.
  6. To test doneness, spoon a small amount onto a chilled plate—if it holds its shape without running, it’s ready.
  7. Remove from heat and let cool.
  8. Transfer to sterilized jars and refrigerate for up to 3 weeks, or process in a water bath for shelf-stable storage.

  • Use frozen blueberries if fresh are not available.
