Description
A luscious, spreadable fruit butter made with fresh blueberries, subtly sweetened and spiced, perfect for toast, yogurt, pancakes, or gifting.
Ingredients
Scale
- 6 cups fresh or frozen blueberries
- 3/4 cup granulated sugar (adjust to taste)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Rinse the blueberries thoroughly and place them in a large heavy-bottomed pot or Dutch oven.
- Add the sugar, cinnamon, nutmeg, lemon juice, vanilla extract, and a pinch of salt to the pot.
- Cook over medium heat, stirring occasionally, until the berries start to burst and release their juices (about 10 minutes).
- Use an immersion blender (or transfer to a blender carefully) to purée the mixture until smooth.
- Return the purée to the pot and simmer on low heat, uncovered, stirring often to prevent sticking, for 30–45 minutes or until thickened to your desired consistency.
- To test doneness, spoon a small amount onto a chilled plate—if it holds its shape without running, it’s ready.
- Remove from heat and let cool.
- Transfer to sterilized jars and refrigerate for up to 3 weeks, or process in a water bath for shelf-stable storage.
Notes
- Adjust sugar based on the sweetness of the berries.
- Use frozen blueberries if fresh are not available.
- Great as a gift or a topping for breakfast items.
- Ensure jars are sterilized if preserving long term.
