- 1 small onion, diced

- 1 cup cottage cheese
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Cook egg noodles according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook for 2-3 minutes until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in garlic, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- In a separate bowl, mix cottage cheese and sour cream together.
- Spread half of the cooked noodles in the baking dish. Top with the cottage cheese mixture.
- Add the remaining noodles, then spoon the meat mixture over the top.
- Sprinkle evenly with shredded cheddar cheese.
- Bake uncovered for 25-30 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley if desired before serving.
