  • 1 medium zucchini
  • 1 medium carrot
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup milk (dairy or plant-based)
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder (or to taste)
  • 1/4 tsp onion powder
  • Salt and black pepper, to taste
  • Optional: A pinch of cayenne pepper

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease.
  2. Scrub and peel the potatoes, then cut them along with the zucchini and carrot into uniform fry-like sticks. Pat dry with paper towels.
  3. In a large bowl, toss the veggie sticks with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  4. Spread them in a single layer on the baking sheet. Bake for 25–30 minutes, flipping halfway, until golden and crisp.
  5. While the sticks bake, prepare the garlic cheese sauce. In a saucepan over medium heat, melt the butter. Whisk in flour and cook for 1–2 minutes.
  6. Gradually add the milk while whisking until smooth and thickened (about 3–5 minutes).
  7. Reduce the heat to low. Stir in the shredded cheese until melted and smooth. Add garlic powder, onion powder, salt, pepper, and cayenne if using.
  8. Serve the hot potato sticks with warm garlic cheese sauce for dipping or drizzling.
