Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease.
- Scrub and peel the potatoes, then cut them along with the zucchini and carrot into uniform fry-like sticks. Pat dry with paper towels.
- In a large bowl, toss the veggie sticks with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Spread them in a single layer on the baking sheet. Bake for 25–30 minutes, flipping halfway, until golden and crisp.
- While the sticks bake, prepare the garlic cheese sauce. In a saucepan over medium heat, melt the butter. Whisk in flour and cook for 1–2 minutes.
- Gradually add the milk while whisking until smooth and thickened (about 3–5 minutes).
- Reduce the heat to low. Stir in the shredded cheese until melted and smooth. Add garlic powder, onion powder, salt, pepper, and cayenne if using.
- Serve the hot potato sticks with warm garlic cheese sauce for dipping or drizzling.
