Ingredients

  • 2 cups canned or fresh peaches, diced
  • 1/4 cup brown sugar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 10 egg roll wrappers
  • Vegetable oil, for frying
  • Optional: powdered sugar, for dusting


Instructions

  1. In a medium saucepan over medium heat, combine peaches, brown sugar, granulated sugar, cinnamon, and nutmeg.
  2. Stir until the mixture starts to simmer.
  3. In a small bowl, mix cornstarch with water to create a slurry, then add it to the peach mixture.
  4. Continue stirring until the filling thickens, about 2–3 minutes. Remove from heat and let cool.
  5. Place an egg roll wrapper on a clean surface with a corner pointing toward you. Spoon 2 tablespoons of the peach filling near the center.
  6. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly, sealing the top corner with a dab of water.
  7. Repeat with remaining wrappers and filling.
  8. Heat 2 inches of vegetable oil in a heavy-bottomed skillet to 350°F (175°C).
  9. Fry the egg rolls in batches, turning occasionally, until golden brown and crispy, about 2–3 minutes.
  10. Drain on paper towels and optionally dust with powdered sugar before serving.
