- 2 cups canned or fresh peaches, diced
- 1/4 cup brown sugar
- 1 tablespoon granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 1 tablespoon water
- 10 egg roll wrappers
- Vegetable oil, for frying
- Optional: powdered sugar, for dusting
Instructions
- In a medium saucepan over medium heat, combine peaches, brown sugar, granulated sugar, cinnamon, and nutmeg.
- Stir until the mixture starts to simmer.
- In a small bowl, mix cornstarch with water to create a slurry, then add it to the peach mixture.
- Continue stirring until the filling thickens, about 2–3 minutes. Remove from heat and let cool.
- Place an egg roll wrapper on a clean surface with a corner pointing toward you. Spoon 2 tablespoons of the peach filling near the center.
- Fold the bottom corner over the filling, then fold in the sides, and roll up tightly, sealing the top corner with a dab of water.
- Repeat with remaining wrappers and filling.
- Heat 2 inches of vegetable oil in a heavy-bottomed skillet to 350°F (175°C).
- Fry the egg rolls in batches, turning occasionally, until golden brown and crispy, about 2–3 minutes.
- Drain on paper towels and optionally dust with powdered sugar before serving.
