- 4 salmon fillets
- 1 cup grated Parmesan cheese
- ½ cup breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- Zest of 1 lemon
- Salt and freshly ground black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- Juice of 1 lemon
- 1 clove garlic, minced
Instructions
- Preheat oven to 400°F (200°C).
- Mix Parmesan, breadcrumbs, parsley, dill, lemon zest, salt, and pepper in a bowl.
- Pat salmon dry and press the Parmesan mixture onto the top of each fillet.
- Heat olive oil in an oven-safe skillet over medium heat. Sear salmon crust-side down for 3-4 minutes until golden.
- Flip and transfer to the oven, cooking for another 5-6 minutes.
- In a saucepan, melt butter, then stir in garlic and lemon juice until fragrant.
- Remove salmon from the oven and drizzle with lemon butter sauce before serving.

- Serve with roasted vegetables or a light salad.
- Use Panko breadcrumbs for an extra crispy crust.
