Instructions

  1. Prepare the Zucchini: Rinse and dry the zucchini thoroughly. Slice zucchini into fry-shaped pieces, making sure they are as even as possible for uniform cooking. Lay the slices on a clean towel and pat dry well on all sides.
  2. Assemble Coating Stations: In one bowl, mix parmesan, panko, garlic powder, onion powder, paprika, oregano, parsley, and salt. In a second bowl, crack and whisk the eggs. In a third bowl, add the flour.
  3. Bread the Zucchini: Line up the bowls: flour, then eggs, then panko mixture. Working in batches, dip each zucchini piece into the flour, then the egg, then coat with the panko mixture, pressing crumbs in gently to adhere. Set breaded zucchini on a pan.
  4. For Air Fryer: Preheat air fryer to 400°F. Place zucchini pieces in the air fryer basket in a single layer, not touching. Spray lightly with cooking oil. Cook for 10 minutes, then flip or shake basket. Cook another 2-6 minutes or until crispy and golden. For extra crispiness, raise temperature to 425°F for 1-2 more minutes if needed.
  5. For Oven Baking: Preheat oven to 425°F. Oil or line two baking pans with parchment. Arrange zucchini pieces on pans with space between. Spray lightly with oil. Bake for 10 minutes, flip all zucchini, spray lightly again, and bake for another 10 minutes until golden brown. For extra crispiness, broil for 1-2 minutes, watching carefully.
