Ingredients

2 cups rolled oats

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1 cup milk (dairy or plant-based)

1 large apple, grated

1 medium carrot, grated

1/4 cup raisins
-
1/4 cup chopped walnuts (optional)

2 tbsp honey or maple syrup (optional)

1 tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.

In a large bowl, mix oats, baking powder, baking soda, cinnamon, and salt.

Add milk, grated apple and carrot, raisins, walnuts (if using), sweetener (if using), and vanilla. Stir until fully combined.

Pour mixture into prepared loaf pan and smooth the top.

Bake for 45–50 minutes, until a toothpick inserted in the center comes out clean.

Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Slice and serve.
