Juicy chicken breasts filled with savory roasted red peppers, fresh spinach, and gooey mozzarella, then baked to perfection for a cheesy, flavor-packed dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Using a sharp knife, cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. Stuff each chicken breast evenly with roasted red peppers, spinach, and mozzarella cheese. Use toothpicks to secure the openings, if needed.
  4. In a small bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush the seasoned oil over both sides of the stuffed chicken breasts.
  5. Arrange the chicken in a baking dish and bake for 25–30 minutes, or until the internal temperature reaches 165°F and the chicken is fully cooked.
  6. Remove from oven, discard toothpicks, and let rest for 5 minutes before serving.
