- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, sliced
- 1 cup fresh spinach
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Using a sharp knife, cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast evenly with roasted red peppers, spinach, and mozzarella cheese. Use toothpicks to secure the openings, if needed.
- In a small bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush the seasoned oil over both sides of the stuffed chicken breasts.
- Arrange the chicken in a baking dish and bake for 25–30 minutes, or until the internal temperature reaches 165°F and the chicken is fully cooked.
- Remove from oven, discard toothpicks, and let rest for 5 minutes before serving.

- Marinate the chicken in the seasoning mix for 30 minutes before stuffing for enhanced flavor.
