Ingredients

1 cup natural peanut butter

1/2 cup plain Greek yogurt (non-fat or low-fat)

1/2 cup honey or maple syrup

2 eggs

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup milk (any kind or non-dairy alternative)
Instructions

Preheat oven to 350°F (175°C). Line or grease an 8×8-inch baking dish.

In a large bowl, whisk peanut butter, Greek yogurt, honey or maple syrup, eggs, and vanilla until smooth.

In another bowl, combine oats, baking soda, and salt.

Gradually stir dry ingredients into the wet mixture. Add milk to thin if the batter is thick.

Fold in chocolate chips, if desired.

Spread batter evenly into prepared dish.

Bake for 18–22 minutes or until a toothpick comes out clean.
