Description

A delicious homemade mixed berry cobbler with a golden buttermilk biscuit topping. The perfect easy summer dessert with vanilla ice cream!


Ingredients

  • Berry Filling:

    • 8 cups (1kg) mixed berries (blueberries, blackberries, raspberries, strawberries)
    • 1/2 cup (100g) granulated sugar
    • 2 tbsp (15g) cornstarch
    • 1 tsp lemon juice
    • 1/2 tsp vanilla extract

 

  • Biscuit Topping:

    • 1 1/2 cups (188g) all-purpose flour
    • 1/3 cup (65g) granulated sugar
    • 1 1/2 tsp baking powder
    • 1/4 tsp salt
    • 6 tbsp (85g) cold unsalted butter, cubed
    • 1/2 cup (120ml) cold buttermilk
    • 1 tbsp buttermilk (for brushing)
    • Coarse sugar (for sprinkling)

Instructions

  • Preheat oven to 350°F (177°C) and grease a 9×13-inch baking dish.
  • In a bowl, mix berries, sugar, cornstarch, lemon juice, and vanilla. Spread in the baking dish.
  • For the topping, whisk flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Add buttermilk and mix until combined.
  • Flatten portions of dough and place them over the berry filling.
  • Brush with buttermilk and sprinkle coarse sugar on top.
  • Bake for 45-55 minutes until golden and bubbling. Cool for 5 minutes before serving.

Notes

  • Serve warm with ice cream or whipped cream.
  • Use fresh or frozen berries; no need to thaw.
