Description
A delicious homemade mixed berry cobbler with a golden buttermilk biscuit topping. The perfect easy summer dessert with vanilla ice cream!

Berry Filling:
- 8 cups (1kg) mixed berries (blueberries, blackberries, raspberries, strawberries)
- 1/2 cup (100g) granulated sugar
- 2 tbsp (15g) cornstarch
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
Biscuit Topping:
- 1 1/2 cups (188g) all-purpose flour
- 1/3 cup (65g) granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 6 tbsp (85g) cold unsalted butter, cubed
- 1/2 cup (120ml) cold buttermilk
- 1 tbsp buttermilk (for brushing)
- Coarse sugar (for sprinkling)
Instructions
- Preheat oven to 350°F (177°C) and grease a 9×13-inch baking dish.
- In a bowl, mix berries, sugar, cornstarch, lemon juice, and vanilla. Spread in the baking dish.
- For the topping, whisk flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Add buttermilk and mix until combined.
- Flatten portions of dough and place them over the berry filling.
- Brush with buttermilk and sprinkle coarse sugar on top.
- Bake for 45-55 minutes until golden and bubbling. Cool for 5 minutes before serving.
Notes
- Serve warm with ice cream or whipped cream.
- Use fresh or frozen berries; no need to thaw.
