Mac And Cheese Meatloaf Casserole

A comforting fusion of two beloved classics—savory meatloaf and creamy mac and cheese—layered together for the ultimate family-friendly casserole.


Ingredients

  • 2 lbs lean ground beef
  • 30 Ritz crackers, crushed
  • 1 (2 oz) packet Lipton onion soup mix
  • 2 large eggs
  • 1 cup ketchup
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • 3 cups macaroni noodles
  • 2 cups milk
  • 1 (10.5 oz) can condensed cheddar cheese soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine ground beef, crushed Ritz crackers, onion soup mix, and eggs. Mix thoroughly.
  3. In a separate bowl, mix ketchup and barbecue sauce. Add half of this mixture to the meat mixture and blend well.
  4. Press the meat mixture evenly into the prepared baking dish. Spread the remaining ketchup-barbecue sauce mixture over the top.
  5. Bake for 30 minutes.
  6. While the meatloaf is baking, cook macaroni noodles according to package directions. Drain and set aside.
  7. In a large bowl, whisk together milk and condensed cheddar cheese soup until smooth. Add salt, pepper, garlic powder, and onion powder; mix well.
  8. Stir in cooked macaroni and 2 cups of the shredded cheese blend until evenly combined.
  9. After the meatloaf has baked for 30 minutes, remove it from the oven. Spread the macaroni and cheese mixture evenly over the meatloaf layer.
  10. Sprinkle the remaining 2 cups of shredded cheese blend over the top.
  11. Return the casserole to the oven and bake for an additional 17–20 minutes, or until the cheese is melted and bubbly.
  12. Let rest for 5–10 minutes before serving.

Notes

  • Use freshly shredded cheese for best melt and texture.
  • Letting the casserole rest helps it set and makes slicing easier.
  • For extra flavor, add a layer of cooked bacon bits between the meatloaf and mac layers.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
