Hawaiian Tropical BBQ Chicken & Pineapple Skewers

Description

Juicy BBQ chicken, sweet pineapple, and tropical flavors grilled to perfection—these Hawaiian skewers are perfect for summer cookouts and parties.


Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • Wooden or metal skewers
  • Chopped cilantro or green onions for garnish (optional)


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  2. In a large bowl, combine the BBQ sauce, soy sauce, olive oil, garlic powder, and black pepper. Mix well.
  3. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
  4. Thread the marinated chicken, pineapple, bell peppers, and red onion alternately onto skewers.
  5. Preheat a grill or grill pan to medium-high heat. Grill skewers for 10–12 minutes, turning every few minutes and basting with remaining marinade, until chicken is cooked through and slightly charred.
  6. Remove from grill and let rest for 2–3 minutes. Garnish with chopped cilantro or green onions if desired. Serve warm.

Notes

  • Use fresh pineapple for best results, but canned pineapple (drained) can work in a pinch.
  • Adjust veggie combinations based on preference or availability.
  • Leftover skewers can be stored in the fridge for up to 3 days.
