Description
Juicy BBQ chicken, sweet pineapple, and tropical flavors grilled to perfection—these Hawaiian skewers are perfect for summer cookouts and parties.

- 1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch chunks
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 cup BBQ sauce
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- Wooden or metal skewers
- Chopped cilantro or green onions for garnish (optional)
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes before grilling.
- In a large bowl, combine the BBQ sauce, soy sauce, olive oil, garlic powder, and black pepper. Mix well.
- Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
- Thread the marinated chicken, pineapple, bell peppers, and red onion alternately onto skewers.
- Preheat a grill or grill pan to medium-high heat. Grill skewers for 10–12 minutes, turning every few minutes and basting with remaining marinade, until chicken is cooked through and slightly charred.
- Remove from grill and let rest for 2–3 minutes. Garnish with chopped cilantro or green onions if desired. Serve warm.
Notes
- Use fresh pineapple for best results, but canned pineapple (drained) can work in a pinch.
- Adjust veggie combinations based on preference or availability.
- Leftover skewers can be stored in the fridge for up to 3 days.
