  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • 1 tablespoon tomato paste (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder (adjust to taste)
  • Salt and pepper to taste
  • For the Wrap Assembly:
  • 46 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa or hot sauce (optional)
  • 1 avocado or guacamole (optional)

Instructions

  1. Cook the Ground Beef:
    In a skillet over medium heat, heat the olive oil (if using) and sauté the chopped onion until soft and translucent. Add the garlic and cook for about 30 seconds. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed. Stir in the tomato paste (if using), cumin, paprika, chili powder, salt, and pepper. Cook for another 2–3 minutes until well combined and heated through. Remove from heat.
  2. Warm the Tortillas:
    Warm the tortillas in a dry skillet, in the oven wrapped in foil, or briefly in the microwave until soft and pliable.
  3. Assemble the Wraps:
    Lay each tortilla flat on a clean surface. Spoon a portion of the seasoned ground beef into the center. Top with lettuce, tomatoes, cheese, and any other desired toppings. Add a dollop of sour cream or guacamole if using. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a wrap.
