Description

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 8 oz egg noodles or pasta of choice
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, heat olive oil. Add diced onion and cook until translucent, about 3 minutes.
  4. Add ground beef and cook until browned, breaking up with a spoon, about 5–7 minutes. Drain excess grease if necessary.
  5. Stir in garlic and mushrooms, cook until mushrooms soften, about 4 minutes.
  6. Sprinkle flour over the mixture, stir well, and cook for 1 minute.
  7. Gradually pour in beef broth while stirring, then add Worcestershire sauce, paprika, salt, and pepper. Simmer until thickened, about 5 minutes.
  8. Remove from heat and stir in sour cream, 1 cup of shredded cheese, and cooked pasta. Mix until combined.
  9. Transfer mixture to the prepared baking dish. Sprinkle remaining cheese evenly over the top.
  10. Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
  11. Garnish with fresh parsley if desired and serve hot.
