For the Grilled Eggplant
- 1 medium eggplant, sliced into rounds
- 1 tablespoon olive oil

For the Wraps
- 4 large wraps or flatbreads
- 1/2 cup hummus
- 1 cup shredded lettuce or baby spinach
- 1/2 cup sliced cucumber
- 1/4 cup sliced red onion
- 2 tablespoons crumbled feta cheese (optional)
Instructions
- Prepare the Eggplant: Slice the eggplant into rounds and brush each side lightly with olive oil. Sprinkle the slices evenly with cumin, salt, and pepper to infuse them with flavor.
- Cook the Eggplant: Grill the sliced eggplant over medium heat or pan-fry them in a skillet for 3–4 minutes per side until they become tender and develop visible grill marks or light charring.
- Prep the Wraps: Warm the wraps or flatbreads in a dry skillet or the microwave just until pliable. Lay them flat and spread each wrap generously with hummus, covering the center area.
- Assemble the Wraps: Layer each wrap with shredded lettuce or spinach, sliced cucumber, sliced red onion, a portion of the grilled eggplant, and a sprinkle of crumbled feta cheese if desired.
- Roll and Serve: Carefully roll up each wrap tightly, tucking in the sides as you go. Slice each wrap in half and serve immediately while the eggplant is warm and the vegetables are fresh.
Notes
- For a vegan version, simply omit the feta cheese or use a plant-based alternative.
- If you don’t have a grill, a grill pan or regular skillet works well for the eggplant.
