- 200g unsalted butter, softened
- 250g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 320g plain flour
- 1/2 tsp bicarbonate of soda
- 200g chocolate chips, plus extra for topping
- 350g Nutella
- Optional: ice cream for serving
Instructions
- Preheat oven to 160°C (fan) / 320°F. Grease and line the base of an 8-inch springform pan.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract, and beat until combined.
- Mix in the flour and bicarbonate of soda until a dough forms.
- Stir in the chocolate chips.
- Press half of the dough into the bottom of the prepared pan and smooth it out evenly.
- Gently spread the Nutella over the cookie dough layer, leaving a small border around the edge.
- Top with the remaining dough, pressing it gently to cover the Nutella. Sprinkle a few extra chocolate chips on top.
- Bake for 25–30 minutes or until golden brown and just set in the center.
- Allow the cookie pie to cool completely in the pan before removing. Slice and serve with ice cream if desired.
Notes
- Ensure butter is at room temperature for easy creaming.
- For a firmer center, chill the Nutella layer before assembling.
- Best served warm with ice cream for extra indulgence.
