Description

A dreamy dessert for Nutella and cookie lovers alike—this gooey cookie pie is packed with chocolate chips and hides a molten Nutella center. Serve warm with a scoop of ice cream for the ultimate indulgence!


Ingredients

  • 200g unsalted butter, softened
  • 250g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 320g plain flour
  • 1/2 tsp bicarbonate of soda
  • 200g chocolate chips, plus extra for topping
  • 350g Nutella
  • Optional: ice cream for serving


Instructions

  1. Preheat oven to 160°C (fan) / 320°F. Grease and line the base of an 8-inch springform pan.
  2. In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, and beat until combined.
  4. Mix in the flour and bicarbonate of soda until a dough forms.
  5. Stir in the chocolate chips.
  6. Press half of the dough into the bottom of the prepared pan and smooth it out evenly.
  7. Gently spread the Nutella over the cookie dough layer, leaving a small border around the edge.
  8. Top with the remaining dough, pressing it gently to cover the Nutella. Sprinkle a few extra chocolate chips on top.
  9. Bake for 25–30 minutes or until golden brown and just set in the center.
  10. Allow the cookie pie to cool completely in the pan before removing. Slice and serve with ice cream if desired.

Notes

  • Ensure butter is at room temperature for easy creaming.
  • For a firmer center, chill the Nutella layer before assembling.
  • Best served warm with ice cream for extra indulgence.
