Refreshing tropical fruit salad tossed in a sweet honey-lime dressing with coconut, mint—ideal for summer picnics, BBQs, or healthy snacking.
Ingredients

Pineapple, diced 
- 
Strawberries, sliced 
- 
Blueberries 
- 
Mango, diced 
- 
Kiwi, peeled and chopped 
- 
Mint leaves (optional, for garnish)

1/4 cup coconut milk 
- 
2 tablespoons honey 
- 
1 tablespoon lime juice + 1 teaspoon lime zest

1/2 teaspoon vanilla extract

Pinch of salt

Instructions
- 
In a small bowl, whisk together coconut milk, honey, lime juice and zest, vanilla, salt, and cinnamon until smooth.

In a large serving bowl, combine all prepared fruits. 
- 
Pour dressing over the fruit and gently toss to coat evenly. 
- 
Serve immediately or chill for 30 minutes before serving.

Garnish with mint leaves or sprinkle hemp/chia seeds if desired.
