Description

Refreshing tropical fruit salad tossed in a sweet honey-lime dressing with coconut, mint—ideal for summer picnics, BBQs, or healthy snacking.


Ingredients

  • Pineapple, diced

  • Strawberries, sliced

  • Blueberries

  • Mango, diced

  • Kiwi, peeled and chopped

  • Mint leaves (optional, for garnish)

  • 1/4 cup coconut milk

  • 2 tablespoons honey

  • 1 tablespoon lime juice + 1 teaspoon lime zest

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

  • Dash of cinnamon

  • Optional: hemp or chia seeds for topping


Instructions

  • In a small bowl, whisk together coconut milk, honey, lime juice and zest, vanilla, salt, and cinnamon until smooth.

  • In a large serving bowl, combine all prepared fruits.

  • Pour dressing over the fruit and gently toss to coat evenly.

  • Serve immediately or chill for 30 minutes before serving.

 

  • Garnish with mint leaves or sprinkle hemp/chia seeds if desired.
