Instructions

- Bread the tomatoes: Dredge each tomato slice first in flour, then dip it into the egg-buttermilk mixture, and finally coat it thoroughly with the seasoned cornmeal.
- Fry the tomatoes: Heat about ½ inch of vegetable oil in a large skillet over medium heat. Fry the breaded tomato slices in batches, cooking each side for about 2–3 minutes until golden and crisp. Transfer to a paper towel-lined plate to drain excess oil.
- Toast the buns (optional): If desired, lightly toast the slider buns in a dry skillet or under the broiler for even more flavor and texture.
- Assemble the sliders: Spread mayonnaise or spicy aioli on the bottom half of each bun. Top with lettuce or arugula, then add a fried green tomato slice, and finish with pickled onions or sliced red onions. Cap with the top bun.
