- 4 boneless, skinless chicken breasts
- 1 cup uncooked long-grain white rice (not instant)
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can cream of chicken soup
- 1 1/4 cups water
- 1 envelope dry onion soup mix
- Nonstick cooking spray
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray.
- Spread the uncooked rice evenly over the bottom of the prepared dish.
- In a mixing bowl, combine the cream of mushroom soup, cream of chicken soup, and water. Mix until smooth.
- Pour the soup mixture over the rice, spreading evenly.
- Place the chicken breasts on top of the mixture.
- Sprinkle the dry onion soup mix evenly over the top.
- Cover the dish tightly with aluminum foil.
- Bake for 1 hour and 15 minutes, or until the chicken is fully cooked and the rice is tender.
- Let sit for 5 minutes before serving.
Notes
- Do not use instant rice as it will become mushy.
- You can substitute chicken thighs if preferred.
- Check rice doneness before removing from oven; add a splash of water and cook longer if needed.
