Ingredients

2 cups (250g) all-purpose flour

2 1/2 teaspoons baking powder

1/4 teaspoon salt

4 large eggs

1 1/2 cups (300g) granulated sugar

1 tablespoon vanilla extract

1/2 cup (125ml) milk

115g unsalted butter

1 tablespoon vegetable oil
Instructions

Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.

Whisk flour, baking powder, and salt in a medium bowl.

In a large bowl, beat eggs and sugar for 7 minutes until thick and pale.

Stir in vanilla extract.

Sift and fold dry ingredients into egg mixture in 3 batches.

Heat milk and butter until melted and hot; stir in oil.

Gently fold the hot milk mixture into the batter.

Divide batter between pans and smooth the tops.

Bake 25–30 minutes or until a toothpick comes out clean.

Cool 10 minutes in pans, then transfer to wire racks.
