Description

Healthy, fluffy banana oat pancakes made without flour or sugar – perfect high-fiber, high-protein breakfast ready in just 20 minutes!


Ingredients

  • 2 ripe bananas

  • 2 eggs

  • ½ cup rolled oats

  • ½ teaspoon baking powder

  • Pinch of salt

  • Maple syrup, for serving (optional)

  • Fresh fruit of your choice, for serving


Instructions

  • In a blender, combine bananas, eggs, oats, baking powder, and salt.

  • Blend until smooth.

  • Let the batter rest for 10–20 minutes to thicken.

  • Heat a non-stick pan over medium heat.

  • Spoon batter onto the pan and cook until golden on both sides.

 

  • Serve with maple syrup and fruit, if desired.

Notes

  • Letting the batter rest helps improve texture.
  • Great for meal prep – store leftovers in the fridge for 2–3 days.
