Instructions
- Combine pumpkin mixture: In a medium saucepan over medium heat, mix together the pumpkin puree, 1 cup of heavy cream, and brown sugar. Stir occasionally for about 5 minutes until the mixture is smooth and slightly thickened. If using optional spices, add them now.
- Add vanilla and cool: Remove the saucepan from heat and stir in the vanilla extract. Transfer the mixture to a bowl and refrigerate for about 20 minutes until cooled to room temperature.
- Whip the cream: In a separate mixing bowl, whip the remaining 1½ cups of heavy cream until soft peaks form. This should take about 2–3 minutes with an electric mixer.
- Fold mousse: Gently fold the cooled pumpkin mixture into the whipped cream using a spatula. Continue folding until the mixture is evenly combined, light, and fluffy.
- Spoon and chill: Spoon or pipe the pumpkin mousse into serving glasses or bowls. Chill in the refrigerator until ready to serve, at least 15 minutes for best texture.
- Garnish and serve: When ready to serve, garnish each portion with a gingersnap cookie or sprinkle with gingersnap cookie crumbs for added crunch and flavor.
Notes
- For a spiced flavor, don’t skip the optional cinnamon, ginger, nutmeg, and cloves.
- Chill the bowl and beaters before whipping the cream for best results.
- This mousse can be made up to a day in advance and stored, covered, in the refrigerator.
