Description

Easy, healthy crustless spinach quiche packed with cheese and fresh flavor—perfect for quick breakfast, weekend brunch, or a light, low-carb meal.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 6 large eggs
  • 1 cup milk (dairy or unsweetened non-dairy)
  • 1/2 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 3 cups fresh baby spinach, chopped


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or similar baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and sauté for 3–4 minutes until softened. Add garlic and cook for 1 minute more.
  3. Stir in chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
  4. In a large mixing bowl, whisk together eggs, milk, cottage cheese, mozzarella, Parmesan, salt, pepper, and nutmeg if using.
  5. Fold in the spinach mixture.
  6. Pour into the prepared baking dish and smooth the top.
  7. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  8. Let cool for 5–10 minutes before slicing and serving.

Notes

  • Use frozen spinach (thawed and drained) if fresh is not available.
  • Can be stored in the refrigerator for up to 4 days.
  • Great for meal prep—reheat slices in the microwave or oven.
