For the Beef

  • 4 pounds rump roast
  • 1 (12 oz) can or bottle beer
  • 1 (10.5 oz) can condensed French onion soup
  • 1 (10.5 oz) can beef broth

For the Sandwiches

  • 9 French bread rolls
  • 2 tablespoons butter


Instructions

  1. Prepare the Beef: Trim any excess fat from the rump roast and place it in your slow cooker insert.
  2. Add Liquids: Pour in the beer, condensed French onion soup, and beef broth over the roast, ensuring it’s well coated.
  3. Slow Cook: Cover the slow cooker and cook on Low for 7 hours, or until the beef is exceptionally tender and easy to slice.
  4. Warm the Rolls: About 15 minutes before the beef is done, preheat your oven to 350°F (175°C). Split the French rolls, lay them cut-side up on a baking sheet, and spread each with butter. Warm in the oven for 10 minutes until toasty.
  5. Slice the Beef: Remove the roast from the slow cooker and thinly slice it against the grain. Skim any extra fat from the cooking liquid, if desired.
  6. Assemble & Serve: Pile the sliced beef onto the warm buttered rolls. Serve each sandwich with a side of the cooking liquid (au jus) from the slow cooker for dipping.

  • Use any beef roast cut, but rump roast works exceptionally well for tenderness and flavor.
