For the Beef
- 4 pounds rump roast
- 1 (12 oz) can or bottle beer
- 1 (10.5 oz) can condensed French onion soup
- 1 (10.5 oz) can beef broth
For the Sandwiches
- 9 French bread rolls
- 2 tablespoons butter
Instructions
- Prepare the Beef: Trim any excess fat from the rump roast and place it in your slow cooker insert.
- Add Liquids: Pour in the beer, condensed French onion soup, and beef broth over the roast, ensuring it’s well coated.
- Slow Cook: Cover the slow cooker and cook on Low for 7 hours, or until the beef is exceptionally tender and easy to slice.
- Warm the Rolls: About 15 minutes before the beef is done, preheat your oven to 350°F (175°C). Split the French rolls, lay them cut-side up on a baking sheet, and spread each with butter. Warm in the oven for 10 minutes until toasty.
- Slice the Beef: Remove the roast from the slow cooker and thinly slice it against the grain. Skim any extra fat from the cooking liquid, if desired.
- Assemble & Serve: Pile the sliced beef onto the warm buttered rolls. Serve each sandwich with a side of the cooking liquid (au jus) from the slow cooker for dipping.
Notes
- Use any beef roast cut, but rump roast works exceptionally well for tenderness and flavor.
