Creamy Strawberry Tiramisu is a luscious no-bake dessert with layers of strawberry-soaked ladyfingers, mascarpone filling, and fresh berries!

Ingredients

Scale
  • Strawberry Syrup:

    • 1 lb fresh strawberries, hulled & sliced
    • ½ cup water
    • ¾ cup granulated sugar
    • 1 tbsp lemon juice
  • Mascarpone Filling:

    • 1½ cups heavy cream
    • 16 oz mascarpone cheese
    • ¾ cup granulated sugar
    • 1 tsp vanilla extract

  • For Assembly:

    • 24 ladyfingers (Savoiardi)
    • Fresh strawberries, sliced (for layering & garnish)
    • Powdered sugar (optional)

Instructions

  • Prepare Strawberry Syrup:

    • In a saucepan over medium heat, cook strawberries and water, mashing them as they heat. Simmer for 5 minutes.
    • Strain into a bowl, pressing out the juice. Stir in sugar and lemon juice. Let cool.
  • Prepare Mascarpone Filling:

    • Whip heavy cream to stiff peaks.
    • In a separate bowl, beat mascarpone, sugar, and vanilla until smooth.
    • Gently fold in whipped cream until combined.
  • Assemble Tiramisu:

    • Dip ladyfingers briefly in strawberry syrup and arrange in an 8×8-inch dish.
    • Spread half of the mascarpone filling over them.
    • Add a layer of fresh strawberries.
    • Repeat layers, finishing with mascarpone.
    • Cover and refrigerate for at least 6 hours or overnight.

  • Serve:

    • Garnish with fresh strawberries and powdered sugar if desired. Serve chilled.

Notes

  • Do not over-soak ladyfingers to prevent a soggy texture.
  • Best when chilled overnight for enhanced flavor.
  • Store covered in the fridge for up to 3 days.
