A hearty and comforting one-pot meal that brings together the classic flavors of a cheeseburger with tender macaroni in a creamy, cheesy broth—perfect for cozy weeknights or quick family dinners.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 4 cups beef broth
  • 1 (15-ounce) can diced tomatoes
  • 1 cup heavy cream
  • 2 cups elbow macaroni (uncooked)
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon Dijon mustard (optional)
  • Fresh parsley or green onions for garnish


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon, about 5–6 minutes. Drain excess fat if necessary.
  3. Add the diced onion and cook for 3 minutes, until translucent. Stir in garlic and cook for another 30 seconds.
  4. Season with salt, pepper, paprika, and oregano, stirring to coat the meat evenly.
  5. Pour in beef broth and diced tomatoes (with juices). Bring to a boil.
  6. Stir in the uncooked macaroni and reduce heat to medium-low. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
  7. Stir in heavy cream, cheddar, mozzarella, and mustard (if using). Cook for another 2–3 minutes until the cheese is melted and the soup is creamy.
  8. Remove from heat and let sit for a few minutes to thicken.
  9. Garnish with fresh parsley or green onions before serving.

  • Use ground turkey or chicken as a lighter alternative to beef.
  • Adjust the amount of cheese based on your desired level of creaminess.
