- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 4 cups beef broth
- 1 (15-ounce) can diced tomatoes
- 1 cup heavy cream
- 2 cups elbow macaroni (uncooked)
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon Dijon mustard (optional)
- Fresh parsley or green onions for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon, about 5–6 minutes. Drain excess fat if necessary.
- Add the diced onion and cook for 3 minutes, until translucent. Stir in garlic and cook for another 30 seconds.
- Season with salt, pepper, paprika, and oregano, stirring to coat the meat evenly.
- Pour in beef broth and diced tomatoes (with juices). Bring to a boil.
- Stir in the uncooked macaroni and reduce heat to medium-low. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
- Stir in heavy cream, cheddar, mozzarella, and mustard (if using). Cook for another 2–3 minutes until the cheese is melted and the soup is creamy.
- Remove from heat and let sit for a few minutes to thicken.
- Garnish with fresh parsley or green onions before serving.
