Description
A cozy and comforting twist on classic stroganoff, featuring tender chicken and earthy mushrooms simmered in a luscious sour cream sauce—perfect served over noodles or rice.

- 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized strips
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 10 oz (280 g) cremini or white mushrooms, sliced
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ cup sour cream
- Salt and pepper, to taste
- 8 oz (225 g) wide egg noodles or rice, cooked according to package directions
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken strips, seasoning lightly with salt and pepper. Cook until golden on all sides but not fully cooked through, about 4–5 minutes. Remove and set aside.
- In the same skillet, add the onion and sauté for 3 minutes until soft. Stir in garlic and cook for another 30 seconds until fragrant.
- Add the sliced mushrooms and season with paprika and thyme. Cook until mushrooms release their moisture and begin to brown, about 5 minutes.
- Pour in the chicken broth and Dijon mustard, stirring well to combine. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Return the chicken to the skillet, nestling it into the mushroom mixture. Simmer gently for 5–7 minutes, cooking until the chicken is cooked through and the sauce has slightly reduced.
- Lower the heat to medium-low. Stir in the sour cream and cook just until warmed through, making sure not to boil. Taste and adjust seasoning with salt and pepper.
- Serve the stroganoff over cooked egg noodles or rice. Garnish with fresh parsley and enjoy warm.
Notes
- Do not boil after adding sour cream to prevent curdling.
- Chicken thighs can be used for a juicier result.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
