Instructions
- Prepare the bananas: Slice bananas into 1/2-inch thick rounds, ensuring each slice is even for easier stacking.
- Assemble the bites: Spread about 1 teaspoon of peanut butter onto one banana slice and top with another slice, forming a mini sandwich. Repeat until all slices are paired.
- Freeze the sandwiches: Arrange the banana peanut butter sandwiches in a single layer on a parchment-lined tray. Place in the freezer for 30 minutes, until firm.
- Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil, if using. Microwave in 30-second intervals, stirring in between, until the mixture is fully melted and glossy.
- Dip in chocolate: Remove the frozen banana sandwiches from the freezer. Dip each sandwich halfway into the melted chocolate, letting excess drip off, then return to the tray.
