1 medium spaghetti squash

2 tablespoons butter

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup sour cream

1 cup shredded cheddar cheese, divided

1/4 teaspoon black pepper

1/4 teaspoon paprika

2 tablespoons grated Parmesan cheese
Instructions

Preheat oven to 375°F (190°C).

Cut spaghetti squash in half, remove seeds.

Place halves cut side down on a baking sheet; roast for 35-40 minutes until tender.

Let squash cool slightly; scrape flesh into strands.

In a skillet, melt butter and sauté onion and garlic until softened.

Stir onion and garlic into spaghetti squash strands.

Mix in sour cream, half the cheddar cheese, salt, pepper, and paprika.
