Ingredients

1 medium spaghetti squash

1 tablespoon olive oil

3 cups fresh spinach, chopped

Instructions

Preheat oven to 400°F (200°C).

Cut squash in half lengthwise and scoop out seeds.

Brush with olive oil, season with salt and pepper.

Place cut side down on a baking sheet, roast 35-40 mins.

Sauté garlic in olive oil, add spinach, cook until wilted.

Scrape squash strands into a bowl.
