Description

Cheesy Garlic Butter Corn on the Cob—grilled to perfection, smothered in garlic butter, and topped with melty cheese for an irresistible bite

Ingredients

Scale
  • 4 ears of corn, husks removed
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder (optional, for heat)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 cup heavy cream or milk (optional, for extra creaminess)

Instructions

  • Preheat the Oven:
    • Preheat oven to 400°F (200°C). Alternatively, grill or cook the corn on the stovetop.
  • Prepare the Garlic Butter:
    • In a small bowl, mix melted butter, minced garlic, paprika, chili powder (if using), salt, and pepper.
    • Stir in chopped parsley for extra freshness.
  • Coat the Corn:
    • Brush each ear of corn generously with the garlic butter mixture, ensuring full coverage.
  • Cook the Corn:
    • Oven Method: Place corn on a baking sheet and bake for 20–25 minutes, turning halfway for even roasting.
    • Grill Method: Grill over medium heat for 10–15 minutes, turning frequently for a slight char.
  • Add the Cheese:
    • During the last 5 minutes of cooking, sprinkle shredded cheese over the corn.
    • For oven baking, broil for 2–3 minutes to melt and brown the cheese slightly.
  • Serve:
    • Remove from heat and drizzle with any remaining garlic butter. Garnish with extra parsley if desired. Serve hot and enjoy!

Notes

  • Pairs well with grilled meats, BBQ dishes, or as a side for summer cookouts.
  • Try different cheeses like Parmesan or Gouda for unique flavors.
  • If cooking on the stovetop, pan-sear with butter for a caramelized finish.
