Description

Cheesy Dorito Chicken Casserole is a bold, creamy dish loaded with chicken, cheese, and crushed Doritos for a flavorful, crunchy bake.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
  • 1 (10 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese
  • 4 cups nacho cheese Doritos, crushed
  • Fresh cilantro (optional, for garnish)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté diced onion until soft and translucent, about 5 minutes.
  3. In a large mixing bowl, combine cooked chicken, sautéed onion, diced tomatoes, cream of chicken soup, sour cream, and taco seasoning. Mix until well combined.
  4. Lightly grease a 9×13-inch baking dish.
  5. Spread half of the crushed Doritos evenly in the bottom of the baking dish.
  6. Spoon the chicken mixture over the Dorito layer and spread evenly.
  7. Sprinkle 1 cup of shredded cheddar cheese over the chicken mixture.
  8. Add the remaining Doritos on top, then sprinkle with the remaining 1 cup of cheese.
  9. Cover with foil and bake for 20 minutes.
  10. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
  11. Garnish with chopped cilantro, if desired, and serve warm.

Notes

  • Use rotisserie chicken for convenience.
  • Adjust taco seasoning to taste for more or less spice.
  • Try adding black beans or corn for added texture and flavor.
