- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
- 1 (10 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1 teaspoon taco seasoning
- 2 cups shredded cheddar cheese
- 4 cups nacho cheese Doritos, crushed
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, heat olive oil and sauté diced onion until soft and translucent, about 5 minutes.
- In a large mixing bowl, combine cooked chicken, sautéed onion, diced tomatoes, cream of chicken soup, sour cream, and taco seasoning. Mix until well combined.
- Lightly grease a 9×13-inch baking dish.
- Spread half of the crushed Doritos evenly in the bottom of the baking dish.
- Spoon the chicken mixture over the Dorito layer and spread evenly.
- Sprinkle 1 cup of shredded cheddar cheese over the chicken mixture.
- Add the remaining Doritos on top, then sprinkle with the remaining 1 cup of cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
- Garnish with chopped cilantro, if desired, and serve warm.
Notes
- Use rotisserie chicken for convenience.
- Adjust taco seasoning to taste for more or less spice.
- Try adding black beans or corn for added texture and flavor.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
