Description

Smoky BBQ chicken, melted cheese, and crispy tortillas make these quesadillas a quick, flavor-packed favorite for lunch, dinner, or snacking.

  • 2 cups shredded cooked chicken (e.g., rotisserie or leftover grilled)
  • 1½ cups barbecue sauce
  • 6 flour tortillas (8-inch)
  • 2 cups sharp cheddar cheese, shredded
  • Optional: sliced red onions, chopped cilantro, or jalapeño slices for added flavor


Instructions

  1. In a medium bowl, combine the shredded chicken with the barbecue sauce, mixing until the chicken is well coated.
  2. Heat a large skillet over medium-low heat.
  3. Place one tortilla in the skillet and sprinkle ⅓ cup of cheddar cheese over half of the tortilla.
  4. Spoon approximately ⅓ cup of the BBQ chicken mixture over the cheese.
  5. Add any optional toppings, such as red onions, cilantro, or jalapeños, if desired.
  6. Sprinkle an additional ⅓ cup of cheddar cheese over the chicken and fold the tortilla over to create a half-moon shape.
  7. Cook for 2–3 minutes on each side, or until the tortilla is golden brown and the cheese has melted.
  8. Remove from the skillet and let it rest for a minute before slicing into wedges.
  9. Repeat the process with the remaining tortillas and filling.
