Description

Blueberry Croissant French Toast Bake – Buttery croissants, juicy blueberries, and creamy custard baked to golden perfection—brunch bliss!

Ingredients

Scale
  • 6 large butter croissants, torn into pieces
  • 1 1/2 cups fresh blueberries
  • 5 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting
  • Maple syrup or whipped cream, for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Arrange the croissant pieces evenly in the dish, then sprinkle blueberries over the top.
  3. In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, cinnamon, and salt until smooth.
  4. Pour the custard mixture evenly over the croissants and blueberries. Press down gently to help the croissants absorb the liquid.
  5. Let sit for 20–30 minutes, or cover and refrigerate overnight for a make-ahead option.
  6. Bake for 35–40 minutes, or until the top is golden and the center is set.
  7. Remove from oven and cool slightly. Dust with powdered sugar and serve with additional maple syrup or whipped cream if desired.

Notes

  • Overnight soaking enhances the flavor and texture.
  • Substitute frozen blueberries if fresh are unavailable—no need to thaw.
  • Best served warm, but leftovers can be reheated in the oven.
