Description
Blueberry Croissant French Toast Bake – Buttery croissants, juicy blueberries, and creamy custard baked to golden perfection—brunch bliss!
Ingredients
Scale
- 6 large butter croissants, torn into pieces
- 1 1/2 cups fresh blueberries
- 5 large eggs
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Powdered sugar, for dusting
- Maple syrup or whipped cream, for serving (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Arrange the croissant pieces evenly in the dish, then sprinkle blueberries over the top.
- In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, cinnamon, and salt until smooth.
- Pour the custard mixture evenly over the croissants and blueberries. Press down gently to help the croissants absorb the liquid.
- Let sit for 20–30 minutes, or cover and refrigerate overnight for a make-ahead option.
- Bake for 35–40 minutes, or until the top is golden and the center is set.
- Remove from oven and cool slightly. Dust with powdered sugar and serve with additional maple syrup or whipped cream if desired.
Notes
- Overnight soaking enhances the flavor and texture.
- Substitute frozen blueberries if fresh are unavailable—no need to thaw.
- Best served warm, but leftovers can be reheated in the oven.
