  • 1/4 cup vanilla-flavored coffee creamer
  • 1/4 cup of the prepared blueberry sauce
  • For the French Toast:
  • 810 thick slices of day-old brioche bread
  • 4 large eggs
  • 1 cup vanilla-flavored coffee creamer
  • Whipped cream, for serving

Instructions

  1. Prepare the Blueberry Sauce: In a saucepan over medium-high heat, combine blueberries, water, vanilla extract, and sugar. Stir and cook until blueberries burst and mixture boils. Reduce heat and simmer for 5 minutes. Remove from heat and cool.
  2. Make the Cream Cheese Filling: In a bowl, mix cream cheese and 1/4 cup vanilla creamer until smooth. Stir in 1/4 cup of the blueberry sauce.
  3. Assemble the French Toast: Cut a slit in each slice of brioche to create a pocket and fill with 2 heaping tbsp of the cream cheese filling. Alternatively, sandwich filling between two slices.
  4. Prepare Egg Mixture: In a shallow bowl, whisk eggs and 1 cup vanilla creamer.
  5. Cook the French Toast: Preheat a skillet over medium-low heat. Dip each filled slice in the egg mixture and cook on the skillet until golden brown on both sides.
  6. Serve: Top with remaining blueberry sauce and a dollop of whipped cream. Serve warm.
